Manual brewing remains as one of the most versatile ways to enjoy coffee. Personally, I find this method of enjoying coffee to be both the most exciting and nerve-wracking; exciting because a single coffee can show completely different sides of itself depending on how you brew it, and nerve-wracking because seemingly small variables, like water composition, type of brewer, pour structure, grind size, agitation, and timing, compound to create your final cup.

After years of research and experience, both behind the bar, teaching classes, and at home, my manual brewing workshops are focused on mastering the variables that go into manual brewing, and using scaleability to customize your coffee, your way. I'm excited to share my tips and experiences with anyone who loves coffee as much as I do, in hopes that we build a greater understanding of the practice of pour-over. 

I ask you to consider this workshop like a lab; an opportunity to try, fail, and ask questions. Together, we will focus on how to:

  • Taste coffee through cupping, and form a group definition of flavour based on our sensory experience through taste, aroma, and feeling
  • Understand the basic attributes that shape our pour, such as grind size, water temperature, brew ratio, and pour structure
  • Explore supplementary elements to enhance or change our manual brewing (i.e. brewer shape, pour technique, agitation, etc.)
  • Train brewing techniques to achieve precision in our manual brewing practice
  • Experiment! We'll be using 100g of gifted coffee (generously provided by Spilt Milk) to build our final brew recipe
  • Finish with a group cupping and enhance our sensory experience of coffee through qualitative and quantitative perspectives

Our workshop isn't about learning a standard recipe; it's about learning everything that goes into a recipe to be able to create our own. It’s a space to ask questions, experiment, and better understand how small changes can completely shift your perception of coffee. By the end of class, you’ll leave with a stronger framework for brewing, tasting, and thinking through your brewing choices with more confidence.

Who are the workshops for?

Anyone! From industry professionals, cafe baristas, even coffee lovers looking for an in-depth course on everything pour-over related.

To ensure participants get the most out of every workshop, sign-ups will be capped at 5 participants per workshop.

What will we be doing in the workshop?

Please use the question box in the booking form to make any specific requests for our workshop. We will do our best to accommodate your needs and interests!

(0:00 - 0:10):

Begin with a group cupping of the coffees, discuss definitions of flavour, as well as a review of tools & equipment we will be using

(0:10 - 0:30):

Based on cupping, set the base of our demo cup; Emily will discuss recommended grind size, water temperature, and brew ratio.

(0:30 - 1:00)

Each participant will have the opportunity to discover and test how variables of brewing affect their final cup. Here, we will be training pour technique and agitation, discuss how different brewers affect the final cup, and experiment with our pour structure

(1:00 - 1:30)

Participants are invited to build their own brew recipe based on what we had discovered in class and create a cup for the class to try

(1:30 - 1:45)

Final cupping of everyone's coffee and practice articulating taste in a group sharing session

(1:45 - 2:00)

When will the workshops be held and where?

The pour-over workshops will be held on the following dates:

  • Monday, April 13th from 11am - 1pm
  • Tuesday, April 14th from 4pm - 6pm
  • Wednesday, April 15th from 11am - 1pm

Do I need to bring anything?

Not at all! Every participant will be gifted a notebook to use during their time in the workshop, as well as a 100g bag of filter coffee (generously provided by Spilt Milk) to use during their session and beyond!

What is your cancellation and/or rescheduling policy?

Cancellations can be processed up to 24 hours of the original session time: if you are a "no-show," we reserve the right to charge the full amount.

Rescheduling is offered up to 24 hours of the original session time. Please be advised that rescheduling may not be possible due to the limited amount of sign-ups available.
